Baking powder and baking soda are the one exception to "just multiply" — here's the math and the table.

Why leavening doesn't scale linearly
Leavening works by producing CO₂ gas inside the batter. In a large batch, the gas bubbles distribute through a greater mass and the structural scaffolding of gluten and proteins sets before the bubbles escape. A higher leavening-to-flour ratio than the original recipe intended means too much CO₂ too fast — the batter rises aggressively, the structure can't support it, and the center collapses. The result is a sunken, gummy interior with a chemical aftertaste from residual unreacted bicarbonate.
Baking soda vs baking powder
Baking soda (pure sodium bicarbonate) requires an acid in the recipe — buttermilk, yogurt, brown sugar, honey, citrus juice — to activate. It's stronger than baking powder (about 3–4× by volume). Recipes use it alongside acidic ingredients to control the reaction speed and neutralize excess acid. When scaling, apply the same leavening adjustments to baking soda as to baking powder.
Baking powder is baking soda pre-mixed with a dry acid (cream of tartar or sodium aluminum sulfate) and cornstarch. Yeast scaling follows the same principle. For a doubled bread recipe, use 1.75× the yeast rather than 2×. The consequence of too much yeast isn't just over-rising — excess yeast produces too many metabolic byproducts (alcohol, CO₂), leading to a pronounced yeasty flavour and a crumb that collapses on itself. For large batches, it's often better to use the standard yeast amount and extend the fermentation time slightly.
Testing old baking powder and baking soda
Baking powder loses potency over time, even in a sealed tin. Moisture from the air triggers a slow chemical reaction that depletes the bicarbonate before it reaches the batter. To test if your baking powder is still active, drop 1 teaspoon into a cup of hot water — if it fizzes vigorously, it's fine; weak or no bubbles means it's time to replace it.
